Cut up lobster as in above recipes and dust with cornstarch. Marinate in ginger and wine. In hot wok, saute in 2 T. melted butter and 1 t. oil, four minced cloves of garlic and 2 T. minced ginger with 1/4 pound minced pork. Add lobster pieces, a little chicken broth and 3 sliced shallots and stir-fry for 3-5 minutes until lobster is red and flesh is cooked (Cook gets to take a bite to sample and determine when done). Add 1 C. shredded Monterey Jack or white cheddar cheese and stir until cheese is melted. Serve. YUM!
