Most of the recipies I have found just thicken about a cup of chicken stock with corn starch. Other seasonings added include 1-3 cloves of garlic, soy sauce, ginger, white or rice wine, and a tablespoon or so of "Oyster sauce". (It varies from recipie to recipie.)

If you want true vegetarian, substitute vegetable stock for the chicken stock, and omit the Oyster sauce.

Can anyone tell me how the Chinese restaurants make the "white/clear" sauce that you find in say Moo Goo Gai Pan? I am a vegetarian, but I order brocoli with garlic in this white sauce. It's so yummy, I would love to make this at home! THanks!
