Fried Water Melon

Ingredients:
Seedless water melon (200 grams), sugar (20 grams), vegetable oil (1000 grams), batter (500 grams), cornstarch (50 grams), oil (125 grams), flour (50 grams), baking soda (pinch).
Procedure:
1) Cut water melon into 1.5 inch long and 0.5 inch square. Put on a plate and sprinkle sugar on top of melon.
2) Mix batter, cornstarch, and oil (125 grams) and let stand for half an hour.
3) Heat up wok and add oil.
4) Dip melon in batter mixture and deep fry in oil.
